Blackberry Apple and Blueberry Crumble

This is so yummy with ice cream, lol!

My son Don luvs blackberries and I had some left over blueberries as well as some apples in the fridge that I usually use for my green juices so I realized I could throw all three fruit into a yummy crumble recipe, lol.

Preparation

Step 1

preheat oven to 400° F (200°C)


Prepare your crumble. In a bowl combine the almond flour, oats, coconut sugar, applesauce, cinnamon and coconut oil. Stir until well mixed. Set aside.


Step 2

To prepare the filling I used my cast iron pan which is of course oven safe, but you can use any oven safe skillet of your choice. On medium high heat, add the blueberries, apples, blackberries, agave, cornstarch, and lemon to your pan and stir with a smooth. Allow it to cook until the fruit releases some of their liquid and thicken. Turn off heat.


Step 3

Top your filling with your lovely crumble mixture, place the pan on the bottom rack of your oven and bake for about 15 to 18 minutes. Next, turn the oven on the broil (high) setting, place your pan on the top rack and broil for 3 minutes or until nice and brown, make sure to not burn your lovely crumble!!


Step 4

Remove your beautiful and yummy crumble from the oven, enjoy the sweet smell of fruits and top it with your favorite rich and creamy non dairy ice cream, lol, enjoy!

I decided to make the applesauce with my food processor to add to the ingredients for the crumble.

Ingredients

Crumble
  • 1 cup oats

  • 1/2 cup almond flour

  • 6 tbsp coconut sugar

  • 1/2 cup applesauce

  • 1 tsp ground cinnamon

  • 4 tbsp coconut oil


Filling
  • 4 to 5 cups of a mixture of blueberries, apples and blackberries.

  • 1 tbsp of lemon juice

  • 2 tbsp of agave

  • 1 tbsp of cornstarch
